Low oxalate keto Parmesan and pepper English/ breakfast ‘muffin’
⭐️Great for breakfast – not crispy like a true muffin but a good substitute
For each muffin
o 1 egg
o 1 tbsp milk or milk substitute
o 1tbsp olive oil
o 10g coconut flour
o ¼ tsp baking powder
o salt and lots of ground black pepper - for low
oxalate version use white pepper
o 10g grated parmesan
o 10 g grated cheddar
⭐️· mix in bowl, put in small glass ramekin and microwave on medium heat for 2 mins ( or more till mixture has set)
